It’s almost summer!!!

Woohoo! Summer is almost here! This simple summer salad with spinach and other greens, roasted red pepper, chickpeas, tomato, and feta only takes a couple of minutes to throw together and is perfect for a light lunch, a side dish, or even entertaining a crowd.

I’m beyond excited to do all the fun summery outdoorsy stuff here in Slovenia. Summer here means lots of ice cream (they have it on every corner), climbing Triglav (the highest mountain in Slovenia), and rafting on the Soča River. I. Can’t. Wait.

For me, summertime also means lots of salads. Like this one I’ve been making almost everyday for a while now. I love it so much it’s quickly become my go-to salad that I make all the time, whether it’s just me at home or if I’m bringing a salad to a party.

Sometimes recipes seem so simple that I never think to post them, and this is one of those recipes. You can easily scale the measurements depending on how many people the salad is for.

This simple summer salad only takes a couple of minutes to throw together and is perfect for a light lunch, a side dish, or even entertaining a crowd.
Recipe type: Salad
Serves: 1 meal or 2 sides
Ingredients
  • about 2 cups of mixed greens
  • 5-7 cherry or grape tomatoes, cut in half
  • 1 roasted bell pepper
  • 2 tablespoons cooked chickpeas
  • 1 ounce feta cheese
  • salt and pepper to taste
  • oil and vinegar for the dressing
Instructions
  1. Toss all ingredients together in a bowl and serve.
