Ideas for Avocado: Fried Avocado Tacos

Hey Everyone!  The next post in this series is a little less healthy, but you have to indulge once in a while.  The hubby and I LOVED the avocado tempura tacos we got in Costa Rica last summer, and I have been wanting to make something similar ever since.  I took this idea from Food Loves Writing:  Avocado Fries with Yogurt Sauce, and I added them to tacos.  Shannalee explains the process really well, you should definitely check it out if you have a chance.  You really can’t go wrong with avocado…just saying.

I also made some homemade tortillas.  I normally use a recipe from 100 Days of Real Food for homemade whole-wheat tortillas.  This time I tried another recipe that came out a little more pliable from The Pioneer Woman.  Her recipe calls for all-purpose flour.  I used King Arthur’s White Whole Wheat Flour, which I also use for most of my baking.

For the tortillas:

For the tacos:

I also put spinach in the tacos. I think it might have been better with cabbage, but I just used what I had. I hope you enjoy these, I sure did!
