This Bacon Avocado Salad is so simple, but can be made to look very elegant if you want to serve it for something fancy.
I love incorporating avocado into salads, and pairing it with bacon is even better. I’m thinking about putting this salad out on Thanksgiving to hold guests over until the turkey and everything else are done.
This salad would make a nice appetizer or lunch. And did I mention it is soooo delicious!
- 2 cups spinach or your favorite salad greens, chopped
- ½ avocado
- 1-2 pieces bacon, cooked and crumbled (reserve the warm bacon fat)
- 1 ounce goat cheese
- salt and pepper to taste
- Add the greens, avocado, bacon, and goat cheese to a bowl or layer onto a plate. Drizzle with warm bacon fat (this is the dressing!). Add salt and pepper to taste.
