Irish Colcannon

A delicious twist on mashed potatoes that makes a great side.
  • 6 medium russet potatoes, peeled
  • ½ cup milk
  • ½ pound bacon
  • ½ head cabbage, shredded (or scallions*)
  • 1 onion, chopped
  • salt and pepper to taste
  1. fry the bacon, crumble, and reserve the drippings
  2. meanwhile, boil the potatoes until tender, drain, and mash
  3. add milk to the potatoes
  4. add salt and pepper to taste
  5. boil cabbage and onion in a separate pot for 3-5 minutes, drain
  6. combine potatoes, bacon bits, bacon drippings, cabbage, and onion in a saucepan
  7. reheat, stirring constantly until hot enough to serve
  8. add more salt and pepper if needed
*Grandma Devlin used cabbage, and Great Grandma Devlin used scallions. I haven't tried it with scallions yet, but I"m sure it would be great!
