Somehow I ended up with several bags of dried apricots. I bought them once for this Mostarda recipe, then I bought them again for one of my favorite chicken recipes in the Power Foods Cookbook.  Then I bought them again for some other reason that I don’t remember. I tend to do that-buy food again because I forgot that I already bought it.

So what did I do? I dunked them in dark chocolate. Sounds like a good solution right?

These Dark Chocolate Covered Apricots are so easy to put together.  All you need is dried apricots  and chocolate.  I made a big batch, put them into a tin with wax paper between the layers, and brought them into work.  They were a huge hit!

I’m going to keep these in mind for homemade real food holiday treats when the holidays come around!

I found that I used less than 1 bag of chocolate chips for 1 pound of apricots.

Ingredients
  • dried apricots
  • dark chocolate chips
optional
  • sliced almonds
  • unsweetened shredded coconut
  • chopped pistachios
  • sea salt
Instructions
  1. Melt the chocolate in a double boiler or microwave
  2. Dip the apricots half way in the chocolate, and place on wax paper to cool
  3. While the chocolate is still wet, sprinkle with optional ingredients
  4. Enjoy!
