Dark Chocolate Bark

I absolutely HATE wasting food. Seriously. The hubby makes fun of me because I will make really weird leftover combinations to use up the food we already have. Spaghetti pie? Tostada with any mixture of veggies that are starting to go bad?

I get it from my dad…”Don’t you dare throw that away! People in third world countries are starving!”. He beat that into my head.

I did some super official academic research (ahem…wikipedia) and found out the average person living in a developed country wastes 220 pounds of food a year! Crazy!

How this Dark Chocolate Bark came to be:

If you have been following along lately, you might know I’m moving to Slovenia. Before we left our house in Monterey, we tried to eat everything and not waste anything. A few days before the movers came I was left with a package of dark chocolate chips and some pistachios.

I remembered these dark chocolate covered apricots (5 ways)–and then this pistachio dark chocolate bark came to be.

It was a hit with the hubby.

Only 2 ingredients and easy to prepare. Great for gifts.
Recipe type: Dessert
Serves: 12

  • 1 package dark chocolate chips
  • crushed pistachios

  1. Line a casserole dish with wax paper.
  2. Melt the chocolate (I did it in the microwave) and pour it into the dish.
  3. Sprinkle with pistachios (or any other topping of your choice).
  4. Let it cool, then break it up. That's it!

You can experiment with the toppings (coconut, almonds, sea salt, etc). The options are endless!
